Side Dishes

Are you tired of eating mundane brown rice everyday? Why not jazz it up with some quinoa and black or red rice. Quinoa is an excellent addition to rice as it adds protein, calcium, iron, and fibre. Black and red rice contain the antioxidant anthocyanin which can help fight against heart disease and cancer. Black rice creates a deep purple colour when cooked which can add a striking contrast to your dish. And this simple mixture of rice and quinoa has a complex nutty flavour that you will love!

Super Rice

I got the idea for making this rice from Sun Rice’s product pictured below. I love this product but found it to be expensive so I decided to create some of my own combinations from scratch.

The best ratio I have found is to use 1 cup of brown rice (or basmati if you prefer white rice) and 1/2 cup of a red grain (either red quinoa or red rice) and 1/2 cup of a black grain (either black quinoa or black rice). I find this ratio to give the best taste and colour.

Ingredients:

  • 1 cup brown or basmati rice

  • 1/2 cup red rice or red quinoa

  • 1/2 cup black rice or black quinoa

  • 4 cups water

Directions:

Rinse rice and quinoa in a strainer. Place all ingredients in a rice cooker or in a saucepan. If using a rice cooker, turn it on and let it do its thing. If using the stovetop, bring rice/quinoa mixture and water to the boil and stir gently. Reduce heat and simmer covered for 25 minutes, or until moisture is absorbed. Remove from heat and let stand covered for 5 minutes.
