These little bites are big on nutrition and full of flavour. They are high in fibre and loaded with vitamins like vitamin E coming from the nuts and seeds. Vitamin E acts as an antioxidant, helping to protect the cells in our body from the damage caused by free radicals. These bites are also rich in plant based protein which is sure to fill you up so they make a great afternoon snack.

Ingredients

1 large carrot grated (about 1 cup)

1 cup of pitted dates (soaked in hot water for 15 minutes)

1/2 cup almonds

1/2 cup pumpkin seeds

2 tbsp desiccated coconut plus extra for rolling

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp ginger

1/4 tsp cardamom

1/4 tsp allspice

2 tsp light flavoured extra virgin olive oil
Directions

Put all ingredients in food processor and process until combined and a dough is formed. Roll dough between palms to form 20 balls. Place on a sheet pan lined with baking paper. Roll each ball on a plate of desiccated coconut and place back on sheet pan. Chill in refrigerator for 20 minutes.
